Kids & Granola Bars

Last Saturday we did an Atelier where the kids&parents did granola bars.

Here is the recipe 'dairy-free' and for a 'gluten-free' option use flakes and flour gluten-free.
For 4 people

40 gr almonds toasted and chopped
100 gr organic oat flakes
40 gr flour
40 gr sunflower seeds
40 gr raisins
40 gr grated coco
2 tablespoons sesame seeds
2 tablespoons flaxseed meal
a pinch of nut meg
a pinch of cinnamoon
a pinch of kosher salt
2 tablespoons of organic brown sugar
1 tablespoon of grated orange zest
80 gr almond puree
120 ml of maple syrup
1 coffeespoon natural vainilla
1 coffespoon tamari (soja sauce gluten-free)
50 ml orange juice



Heat the oven at 180ºC.
In a bol mix the almonds, the oat flakes, the flour, the sunflower seeds, the raisins, the grated coco, the sesame seeds and the flaxseed meal, the nutmeg, the cinnamoon, the salt, the sugar and the orange zest.
In another bol, mix the almond puree, the maple syrup, the vainilla, the tamari and the orange juice.
Add the wet ingredients to the dry ingredients and mix it untill the dry ingredients are well incorporated.
With the help of a tablespoon, spread the granola mixture into small individual pan until half the height.

Put in the oven for 10 to 15 minutes. The little bars have to be golden and crusty.

Paleo Bread for everybody!

I finally founded a gluten, dairy and grain free bread which is actually good!
Not too heavy, not too densy and tasty!

So if you wanna go Paleo or just remove gluten from your alimentation, try this bread, full of proteins and fiber.



You will need:

6 organic eggs
1 tablespoons of raw honey
1/2 cup of coconut oil (or ghee if you want a dairy version)
1/2 teaspoon of sea salt

1 teaspoon of baking soda
3/4 cups (around 96gr) of coconut flour ( I actually put a bit less of coconut flour and mix it with flax seed meal)

Heat the oven at 180ºC. Grease rectangular loaf pan.
Mix the eggs, honey coconut oil and salt.
Combine coconut flour with the baking soda with the liquid mixture until there are no lumps.

Pour into your loaf pan and bake for around 30/40 minutes.
